"Sugar Bush" by Debbie Oppermann. A Canadian tradition is the making of Maple Syrup in March and in the traditional way it requires you to bore a hole in the trunk of a Maple tree and collect the exuded sap in covered pails. The sap is then processed by heating to evaporate much of the water leaving the concentrated syrup. Many Mennonites in this area of Conestogo, Elmira and St Jacob's Ontario Canada still tap the old fashioned way. This sugar bush has a number of Maple trees tapped and although there is still snow on the ground the temperature is changing from winter to spring when the sap starts flowing. A local tradition is the Elmira Maple Syrup Festival held in March and is definitely not to be missed!
