"Tap Into Spring" by Debbie Oppermann. The tapping of the Maple trees in March is a Canadian tradition and is done when the temperature changes from winter to spring as the sap then begins to flow. In this image of the country road, near Conestogo Ontario Canada, with every Maple tree tapped, the farmers, mostly Mennonites, are using the traditional method of boring holes in the tree trunks and collecting the exuded sap into covered pails which will then be processed by heating which will evaporate much of the water, leaving the concentrated syrup. The Elmira Maple Syrup Festival in March is not to be missed and draws thousands of visitors!
