"Fiddle Dee Dee" by Debbie Oppermann. What I wait for each spring is the fresh fiddleheads, from the Ostrich Fern, Matteuccia struthiopteris, that can be found in the woods near our house or bought at the local market. They are loaded with vitamins, minerals, potassium, iron, omegas and are an anti oxidant as well. My recipe is really simple, wash them well, take off the brown bits, and then saute with a little butter and fresh garlic. They are so good! This is a delicacy that can only be enjoyed in early spring when they are picked fresh and the timing is critical because they do grow fast and when too big, they are bitter.
