"Not Just A Pretty Flower" by Debbie Oppermann. Chives are part of the Allium family, the smallest of the edible onions and an absolute necessity in my home. Chives are used in so many dishes whether as a garnish or flavoring ingredient. I add Chives to sour cream for baked potato, stir fry's, scrambled eggs, salads and many more dishes. The best time to add chive to cooked dishes is at the end of the cooking process as it is sensitive to extensive heat. A bit of history - ancient Chinese used chives for thousands of years and Marco Polo is credited with bringing the Chives to Europe from China! This native perennial plant was captured in a garden in Guelph Ontario Canada.
