Artist's Description

"Olive Oil Old Fashioned Way II" by Debbie Oppermann. When in Italy, we went to an olive oil and winery farm in Tuscany and were amazed at the vintage olive oil making equipment that was on display. This is the compressor, the paste is between the layers and presses the oil out which then goes to the filter. It must have taken a very long time to make extra virgin olive oil back in the day and even now the process is much quicker but still a long process. No wonder olive oil is so expensive!
